Fir Forager #2 • Gruit – collab w/ Root Shoot Malting • 7.0% • 12oz $9 / 8oz $7 / 4oz $4
This year’s batch of Fir Forager is transformed by a totally new grain profile, utilizing all four grains (barley, wheat, oats, and rye) from local maltser Root Shoot Malting. Toast and caramel sweetness, cherry, and subtle spice from the grain is rounded out by the earthy and piney flavors picked up during the historic brewing technique of running wort through an aspen log filled with young spruce and fir tips. Wooden Otter ‘25 • Rye Whisky Barrel-aged English Barleywine • 8oz $10 / 4oz $6
A revision from our earlier barleywines, this beer is darker, richer, and much stronger on the alcohol. All the opening notes are dominated with rich malt starting as dark toast, caramel, and toffee, followed by undertones of chocolate and then finishing with dark, dried fruits of cherry and plum. The Laws Whiskey Rye barrel adds aromatics of oak, vanilla, and the whisky itself to provide the balance to those deep malts. • Recommended adventure: Finding a quiet spot far away from Matt and Kate or your glass might vanish • Maximum of two 8oz pours per guest

Combine our Russian Imperial Stout recipe with a six hour boil and sixteen months in Bourbon barrels, and what comes out is pure Wooden Mayhem. The aroma begins as rich molasses, light roast coffee, baker’s chocolate, and toffee, then shifts to raisins and dried dark cherries. The Root Shoot single malt barrel mellows the roast, adding vanilla, oak, and whisky. Plums, dates, and figs round out the palate with a smooth, lasting finish. • Featured ingredients: Molasses, roasted malts • Recommended adventure: Contemplating your life philosophy by a fire • Maximum of two 8oz pours per guest

When a true Scotsman distills single malt whisky in America, why not use Scottish peated malts? When aging imperial stout in a whisky barrel, why not use that same peated barrel? The aroma opens with earthy peat smoke, followed by the rich roasted malts of the stout with the sweet oak lasting through the palate. The finish lingers with an intense combination of smoke, coffee, chocolate, vanilla, and dried pit fruits. • Featured ingredients: dark crystal and roasted Simpson’s malts • Recommended adventure: Hiking to Sky Pond, slaying dragons
Plum Ptarmigan ’25 • Fruited Pale Sour • 8oz $10 / 4oz $6
We created this variant of Ptart Ptarmigan by aging a wheat beer in wine barrels with a mixed sour culture, after 20 months we racked the beer back to steel and rested on plums for an additional 6 months. The final beer was then blended with a lighter sour to mellow the ptartness. The final beer has a pink hue with juicy plum notes over a firm acidity. • Featured ingredients: Wheat Malts and Plums • Recommended adventure: Napping in a hammock by the river, hiking through the boulder field on Long’s Peak
